Caitlin’s Confections: Healthy Coconut Cowboy Cookies

Some days you just need a good cookie. Maybe it was the rain but I came home a few days ago needing the house to smell like chocolate and baked goods. That being said, I’m still trying to be a bit healthier with my baking. These Coconut Cowboy Cookies curb your cravings and they are kind to your tummy. With lots of good fats, they’ll fill you up quick and satisfy your sweet tooth with minimal sugar.


2c almond flour

1c shredded coconut

1c rolled oats

1 tsp. baking powder

2 eggs

1/3c honey

1/3c coconut oil

chopped dark chocolate pieces


In one bowl, combine your flour, oats, coconut, and baking powder. In a second bowl, whisk your eggs until frothy. Carefully add honey and coconut oil to the egg, mixing until incorporated. Slowly pour your wet ingredients into your dry ingredients and combine. Add chocolate pieces, stir one final time, and then shape dough into 1 inch balls, pressing flat gently on a parchment paper covered tray. Bake at 350 degrees for 15 minutes.
