Growing up, we drank Virgin Pina Coladas all summer long. To this day they instantly transport me to a white (or pink) sand beach. I’m a huge fan of the blend of tropical flavors- who doesn’t love pineapple and coconut together? However, I recently tried topping my frozen cocktail with chili lime spice from Trader Joe’s and WOW, it’s a game changer. A super easy recipe to throw in a blender and buzz up quick!
Combine 2 oz coconut milk with 2 oz white rum. Add your base, along with 1 cup frozen pineapple and 1/2 a cup of ice to a blender. Blend on high until smooth and frothy. Pour in a chilled glass and top with chili lime spice before serving.
