Caitlin’s Confections: Mrs. Dooley’s Gingersnaps

These gingersnaps come handed down from a family friend to my mom to me. I swear, they taste too good to be true. The ultimate holiday staple- flavorful, chewy, sweet, and just crisp enough. Plus, the dough is honestly effortless to make. If you need a quick treat to gift or an extra addition to a dessert table, this recipe is for you! I hope you love it as much as we do.


3/4 c butter

1 c sugar

1 egg

4 tbsp molasses

2 c flour

3 tsp baking soda

1 tsp ginger

1/2 tsp cinnamon

1/4 tsp cloves


Combine your ingredients in order, wet then dry, in a stand mixer. Allow each group to blend thoroughly. Your dough should form solid balls about the size of walnuts. Roll these balls in sugar and set on a cookie sheet. Bake at 350 degrees for 12 minutes. That’s it- so easy!
